Abstract:Many types of products are produced by using the same plant and machinery and enterprises have to produce with the most suitable product mix. When determining the product mix, production plans should be made considering all facility and capacity constraints, customer needs and company strategy. Dried fruits and vegetables are produced in the enterprise where the study is made. The products may be perishable until the final production stage. Within the scope of this thesis, a product mix model with time windows was developed to solve an appropriate production plan for this enterprise and the model was solved in a way that maximizes the profit of the most appropriate product mix considering a certain planning period. Determining the product mix and quantity with the product types that change according to the season constitutes the direct sales plan of the company and affects the cash flow and budget plans and thus turnover and profit. With the results of this model, the company will determine the right product mix and direct the sales department to increase its profits and will use machinery and equipment capacities in an optimum way. The model includes 4 products, 8 stages, time constraints, machinery and labor constraints for the planning period under consideration. The bottleneck operation was determined by examining the model constraints and solution. It has been demonstrated that the improvement of processing, handling and preparation times of these 4 products will directly increase the profit. For the improvement works, projects have been proposed to the enterprise under the main headings such as “plant placement”, “investment in machinery-equipment”, and “training”. The total profits to be obtained from the implementation of the proposed projects are compared. In literature studies, it was seen that most of the studies on perishable products focused on distribution system and shelf life after production. In this thesis, a contribution has been made to the literature by making studies for a production system that exhibits the perishable product characteristics during the production process and the finished products are not perishable
