Determination of lactic acid and exoplysaccharides production in low-cost raw materials by some Lactobacillus delbrueckii ssp bulgaricus and Streptococcus thermophilus strains

Özet

The aim of the present work was to support development of economical processes for higher yields of lactic acid and exopolysaccharide production by using low-cost raw materials such as whey, whey with supplementation (WSW) and different beet juice concentrations (1-5 g beet juice/100 ml water). In this study, lactic acid and exopolysaccharide (EPS) production were investigated in two strains of Lactobacillus delbrueckii ssp. bulgaricus (B3, G12) and three strains of Streptococcus thermophilus (W22, T8, T12). Lactic acid and exopolysaccharides production by these strains were determined by a spectrophotometric method in MRS/M17 medium and whey, whey with supplementation (WSW) and different beet juice concentrations at different periods (24-48 h). It was observed that lactic acid and EPS production by these strains increased by the increasing the beet juice concentration.
