Designated production of exopolysaccharide (EPS) and lactic acid with sugarbeet molasses by some lactic acid bacteria

Özet

Exopolysaccharide (EPS) and lactic acid production by two strains of L. delbruckii subsp. bulgaricus (133, G 12) and three strains of S. thermophilus (W22, T8, T12) were investigated. Exopolysaccharides and lactic acid production by these strains were determined by a spectrophotometric method in MRS/M17 broth medium and different sugarbeet molasses concentrations (1-5 % w/v concentration [1 -5 g molasses/ 100 mL water]) for different periods (24-48 h). The yield of exopolysaccharide and lactic acid, produced by the strains, ranged between 65-290 mg/L and 4.6-10.8 mg/mL respectively. It was observed that EPS production by these strains increased by increasing the molasses concentration, while lactic acid production by these strains decreased by increasing the molasses concentration.
