In this study, a reliable digestion procedure for the analysis of tomato paste was developed. Iron, copper, and zinc were determined by atomic absorption spectrometry in tomato paste as a function of storage period in its can. The accuracy and precision of the method were satisfactory. Mean recovery of the elements was above 95%. It was found that the iron concentration of buffer solutions stored in tomato paste increased as a function of pH and storage time.
